Apéritif

Aperitif sources the finest ingredients from across the island and the world – and from its very own greenhouses. Set amidst the lush jungle valleys of Ubud, Apéritif is the second signature fine dining restaurant at Viceroy Bali (joining CasCades, above). It’s main culinary focus is on top-shelf produce, sourced from the hotel’s own greenhouses and from across the island and the world. These ingredients are then presented in an exquisite 8-course degustation-only menu, featuring sublime creations like the lightly cured Parrot Fish rolled in seaweed powder, or the signature Venison Wellington studded with foie gras and dolloped with a rendang sauce. The aperitifs here are unsurprisingly impressive too, spearheaded by award-winning bartender Ran Van Ongevalle, and inspired by the Roaring Twenties with a tropical Bali twist for good measure.
